U.S. National Whitewater Center

We wanted to tell everyone about a great new outing that Stephen and I discovered. This past week, we went to the U.S. National Whitewater Center in Charlotte, NC. We had a blast! The center is where the Olympic teams train, but it is open to the public for whitewater rafting (classes I-V), zip-lining, ropes course, rock climbing, flat water canoeing, stand-up paddleboarding, mountain biking, and the list goes on and on!

No one went in the water, but we won't mention the close calls!


Didn't get a picture of the white water rapids, but this is a class I that is family friendly.

Family Pictures 2012

Winter Gala 2012


It isn't often that Stephen and I get all dressed up (...as in the last time was our wedding!), so we jumped on the chance to go to a winter gala that Stephen's medical school sponsored.
These are our good friends Tyler and Stephanie. Tyler is one of Stephen's classmates and his beautiful wife, Stephanie, is pregnant with their first child! They are going to be great parents!

These are our wonderful neighbors Chis and Beth. Chris is also one of Stephen's classmates and I am so thankful to have his sweet wife Beth to keep me company when our hubbies are studying. No babies for them yet, but they are parents to 3 adorable (and crazy) cats!

It was a great night filled with awesome food, laughter, and dancing! We definitely won't be waiting another 3 years to go do this again...it's just too much fun!

Happy Valentine's Day!


This Valentine's Day is kind of a unique one for Stephen and me because for the first time in 6 years, we're not together. As many of you already know, I am finishing up physical therapy school on one side of the state and Stephen has started medical school on the other. This was a very difficult decision for us, but one that we were led to make with our future family in mind. Being able to step back this Valentine's day without my focus being on a day centered around Stephen and my relationship (not that there is anything wrong with that!), I am reminded of verses 1-3 in 1 Corinthians that precede the famous "Love is patient, love is kind". The verses remind us that in whatever we do "if we have not love, we gain nothing". I have been reminded today to open my eyes, once again, and look around me at the many hurting people who are in such need of love. I hope you all have a wonderful Valentine's Day and feel very loved yourselves!

Magnolia Bakery's Cupcakes


Aren't we all looking for that cupcake recipe that is "The One"? I tried this recipe today from Magnolia Bakery in New York, and I have to say it's pretty darn close to perfect. The cake itself is the best I've ever had...almost like an angel food cake it's so fluffy. Just a heads up: These suckers burn, baby, burn if you don't watch them closely...so, as you can probably guess, this picture is not from my first batch (sizzle....)

For the cupcakes:

Yield: 24 standard cupcakes
Ingredients
1 1/2 cups (190 grams/6.5 ounces) self-rising flour
1 1/4 cups (160 grams/5.5 ounces) all-purpose flour
1 cup (2 sticks/227 grams/8 ounces) unsalted butter, softened
2 cups (400 grams/14 ounces) white sugar
4 large eggs, at room temperature
1 cup (250 mL) milk
1 teaspoon (5 mL) pure vanilla extract
Method
1. Preheat oven to 350 degrees F. Line 2 standard muffin tins with cupcake liners of your choice (24 total).
2. In a small bowl, combine the flours and set aside.
3. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition.
4. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.
5. Carefully spoon the batter into the cupcake liners and bake in middle of oven until tops turn golden brown and toothpick inserted into center comes out just clean (a few crumbs is okay), about 18 minutes.
6. Cool the cupcakes in tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing.

For the frosting:
Ingredients
3 sticks (340 grams/12 ounces) unsalted butter, softened and cut into cubes
5 cups (625 grams/22 ounces) confectioners’ sugar (icing, powdered)
2 tablespoons (30 mL) milk
2 teaspoons (10 mL) pure vanilla extract 
pinch of salt
Method
1. In the bowl of an electric mixer fitted with the paddle attachment, whip butter for 5 minutes on medium speed. Butter will become very pale & creamy.
2. Add remaining ingredients and mix on low speed for 1 minute, then on medium speed for 5 minutes. Frosting will be very light, creamy, and fluffy.
3. Add touch of gel food colour, if desired and mix until blended.
4. Best used right away.

Introducing the Romeos...the furry ones that is

 

We couldn't introduce our family without posting this video because it explains our dogs' personalities to a T! Oliver is our nut, but a sweetheart. Then,...there's Lily. Lily is our "rescue" dog. She has been passed from family to family, but has now found her forever home with us. As I'm learning through Cesar Milan's teaching, dogs don't live in the past and have the capability of being great dogs if they come into a healthy home where they know their position within the "pack". That is exactly what Lily has become, a great dog. Oh, how much laughter these furry creatures have brought into our home, especially when they're up to the mischief we call "Dachshund" :)

ER for the Pups


Well, we didn't think we'd have news to share so soon, but our dogs, Oliver and Lily, had quite an eventful day yesterday. I took them to the Vet to have their annual shots and check ups and everything went wonderfully. Around 3 hours later...we had two full swing allergic reactions taking place. Double Trouble! The emergency vet was great and knew exactly what to do, so all is well and the hives and puffy faces are almost gone. I didn't get any pictures of them this time, but this is poor Oliver the last time it happened. Look at those sweet, puffy cheeks!
